Chicken Pot Pie Crumble - My Favorite Pot Pie

Gambar
You are looking at a must try comfort food meal. I was never a fan of chicken pot pie until a friend so kindly brought me this dish after I had my baby a few years ago. I'm fully in love with it! Rather then getting a surrounding of heavy pie crust you get a fluffy biscuit topping that will quickly have you loading your plate with a second round. In my opinion the topping is what makes this dish. It sets it apart from it's competitors, being loaded with Parmesan cheese, plenty of heavy cream, some black pepper and cayenne pepper for a slight kick, and I also added a little garlic powder (because how can I resist?). Then to finish, it's browned in the oven to beautifully golden perfection.  And the wonder doesn't just end at the topping. That is just the beginning. It's loaded with fresh, sauteed veggies, fall apart tender chicken which is all tossed in a creamy white sauce. This hearty dish would also be incredible made with leftover turkey from your upcoming Thanks...

Slow Cooker Chicken Tortilla Soup

Gambar
If you've been following I'm sure you know by now that I love a good slow cooker meal. Who doesn't? Meals prepared in a slow cooker yield flavorful and tender results with such minimal effort. This soup is definitely proof of that. If you don't have a slow cooker you could also make this on the stove top. I've also prepared it on the stove top before and added grilled chicken to it. If you choose to prepare it on the stove top add cooked chicken and allow the soup an hour to simmer over low heat so all the flavors have some time to develop and meld together.  I love Mexican food. I could eat it everyday. It has such unique and exciting flavors. Addictive flavors if you ask me. I hope you enjoy another Slow Cooker Meal from Cooking Classy =). Slow Cooker Chicken Tortilla Soup Yields about 5 servings Ingredients: 20 oz boneless skinless, chicken breasts halves 3 (14.5 oz) cans low-sodium chicken broth 1 (14.5 oz) can diced tomatoes with green chilies 3/4 cup diced yel...

Grilled Chicken Caprese Pasta

Gambar
If you love Italian food then this is a deluxe meal you will most definitely want to try! It is fancy, loaded with fresh goodness, creamy, hearty and beyond good! You get everything that's on your average Caprese Chicken and so much more, with the tender pasta, fire roasted tomato sauce, additional garlic (because I think they never put enough garlic in the store bought bottled spaghetti sauce, you could even add two cloves to the recipe), and yes of course the perfectly grilled chicken breast strips. This is a meal you are going to remember. If you wanted to  really  splurge you could even add in some cooked Pancetta or Bacon, yum! Sorry I didn't get many pictures (I wanted more pictures with the grilled chicken showing through it's kind of hidden in there), this was my families Sunday dinner and I couldn't resist that ooey gooey cheesy goodness long. It was calling my name. I looked over to my husband and the cheese was dripping clear from the fork near his mouth to t...

Grilled Chicken Teriyaki Kebobs and a Great Find

Gambar
Check out this video... Say what?  Disposable  bakeware! Has anyone tried these yet? I'm dying to get my hands on some.  I absolutely love to cook and bake but I hate the cleanup. These things are genius. I definitely want these at the next dinner party I host. Thank you thank you Chinet for improving the world of cooking. Less stress due to less mess, yes please. I'd rather spend my time in the kitchen making delicious food rather than cleaning up after it. Bake, eat, toss, repeat =). Feast your eyes on the perfect summer dinner. These Grilled Chicken Kebobs are so tantalizingly delicious! Tender chicken, lightly charred fruit and veggies all finished off with a generous smothering of homemade teriyaki sauce, yes these are wow good! I know the servings I listed says 4 but I might recommend 3, my husband and I each ate about 4 skewers. They were so tasty I just couldn't stop, but they're mostly veggies right? Really these are quite healthy. They are low in fat, full of ...

Crispy Pesto Parmesan Chicken

Gambar
My all time favorite dressing is Old Spaghetti Factory's Creamy Pesto Salad dressing. I've made  my own copycat version  so I can enjoy it at home all the time. It is definitely a family favorite. Not only do I dress my salad with it but I use it the same way you'd use ranch, for example, to dip fries or pizza in or to drizzle over baked potatoes. When I serve it alongside a breaded chicken I always end up dipping my chicken in it too. That is why I decided just to create a recipe that incorporated it right in from the start rather than just dipping it. This is similar to a baked ranch chicken only with a Pesto salad dressing and some Parmesan instead of ranch dressing. Technically it should probably be called Crispy Pesto  Dressing  Parmesan Chicken (because it doesn't use pesto, but rather pesto dressing) but that's far to long so I went with the shorter version. This chicken is so flavorful and delicious! I love the flavor of basil and it works wonders to this ch...

Chicken Cordon Bleu Casserole

Gambar
Casserole. There I said it. I've always had a hard time with casseroles which is why I rarely make them. We've all had our fair share of bad casseroles, I know you know what I'm talking about. The kind where it seems like someone just threw whatever random leftovers they had sitting in the back of their refrigerator into one dish to create who knows what. I think those bad casseroles have given a bad rap to all casseroles. I wanted to call this Chicken Cordon Bleu Bake but that just sounds silly so I just need to overcome my fear of casseroles and call it what it is. My mom did make one casserole I often crave, it's a Chicken Broccoli Rice casserole, I will have to post it in the future.  This Chicken Cordon Bleu Casserole is a casserole to remember. I love the combination of flavors in chicken cordon bleu, but really who wants to spend all that time pounding, layering and rolling chicken? That's why I decided to create this dish. You simply layer everything in one...

Grilled Chicken with Balsamic Barbecue Sauce

Gambar
Are you looking for a wowing and simple grilling recipe for the upcoming 4th of July celebrations? Well, I'm quite certain you've found just what you are looking for. This grilled chicken smothered in a homemade Balsamic Barbecue Sauce simply said, is incredible! It is definitely up there with my favorite grilled chicken recipes. You get a tender chicken breast grilled to perfection that's basted with a flavorful, tangy, not overly sweet sauce that will have you coming back for more. I'd say this recipe is one you most definitely are going to want to try.  Don't be scared by the long list of ingredi ents in the sauce, most of them are pantry staples that you likely already have on hand.  I hope you enjoy and have a great 4th of July!  Grilled Chicken with Bals amic BBQ Sauce Yields about 6 servings Ingredients: 6 medium boneless, skinless chicken breasts halves (thighs would work great too) Salt and pepper, to taste Olive Oil for brushing grill 1 Recipe Balsamic Bar...

Hawaiian Chicken Salad Sandwiches

Gambar
I'm loving the Hawaiian flavors lately. I made Hawaiian BBQ Pulled Chicken Sandwiches a few days ago (which were amazing if I do say so myself =) and I had some left over fresh pineapple so I thought, why not make another Hawaiian inspired dish. These sandwiches are packed with the flavors of the Islands. I tried to think of all foods that remind me of Hawaii when making this recipe (even though sadly I've never been there, what is up with that??). Of course I thought of Hawaiian Pizza, one of my favorites with it's ham and pineapple combo. Then I'd say the first type of nut I think of when I think of Hawaii is Macadamia, and can you have a chicken salad sandwich without some kind of nut? Also, I wanted to add a bit of sweetness to the dressing (but don't worry it's not overly sweet) so I added in the honey and pineapple juice. I don't like a really thick dressing over my chicken salad but if you do you could omit the pineapple juice and add a few more table...

Hawaiian BBQ Pulled Chicken Sandwiches (Slow Cooker Recipe)

Gambar
This should be called "The Sandwich of Summer." I made this recipe because I love pulled pork so much so I wanted something similar but entirely its own. Basically I wanted something delicious, out of the ordinary that will make people say "wow." Of course I made it a slow cooker recipe because that's what I love and that's what everyone else seems to love. This Hawaiian BBQ Pulled Chicken Sandwich is bursting with the flavors of the islands (especially when served along with fresh, glazed/grilled pineapple). It inspires me to want to host a luau party in my backyard.  Don't be scared by the long list of ingredients, most of them, if not all of them, you probably already have in your fridge and cupboard. If you are looking to try a new dish that is enticingly delicious and fully amazing your going to want to try this sandwich! Share and enjoy! Serve it with or without green onions (I liked it with): Hawaiian BBQ Pulled Chicken Sandwiches Yields about 6 s...

Chicken Posole

Gambar
This is one of my all time favorite soup recipes! I got the recipe from my sister a few years ago. Thanks for the recipe sista =)! I changed it up quite a bit to add more flavor. Before it didn't have any spices or green onions, the chicken wasn't grilled and it wasn't served with avocados. Sometimes if I don't have fresh tomatoes I will also use canned but if you use canned I would say omit the sugar (I added sugar to tone down the acidity of the fresh tomatoes). This soup is hearty, healthy, loaded with fresh goodness and full of exciting flavors (and heat if you prefer). This soup isn't your traditional Posole. It's very similar to chicken tortilla soup but with added cabbage and hominy. If you like Mexican food you will love this soup! Chicken Posole Yields about 4 servings Ingredients: 2 lbs boneless, skinless chicken breasts, grilled and shredded* 1.25 lb Roma tomatoes (about 5) 1/2 large yellow onion 2 green onions 3 cloves garlic 1-5 jalapenos, to taste*...

Baked Chicken Nuggets

Gambar
Chicken nuggets that are still perfectly golden, full of flavor and deliciously crisp without being fried, say what!? These chicken nuggets are utterly amazing. They are the best chicken nuggets I've ever had, and I couldn't believe they were healthy! I love how healthier things can actually taste better than their less healthy opponent. This recipe is true proof of that. This is another Pinterest find (I did change up a few things), it is one of my new favorite recipes. It's quick, it's incredibly easy and it's a crowd pleaser. Chicken nuggets aren't just for kids, adults and kids alike will immediately fall in love with these baked chicken nuggets after just one bite. Enjoy! Baked Chicken Nuggets Yields about 2 - 3 servings Ingredients: 1 lb boneless, skinless chicken breasts (about 2 medium), diced into bite size pieces 1 Tbsp Extra Virgin Olive Oil 1/4 cup Italian seasoned bread crumbs, white or wheat (I used white) 1/4 cup Panko bread crumbs 3 Tbsp finely g...

Slow Cooker Chicken Teriyaki

Gambar
Slow cooker meals, aren't they just amazing? Throw the food in, say goodbye, then several hours later say hello to dinner. It really doesn't get much easier. I saw this photo/recipe on foodgawker.com and new I had to try it. I think I've finally realized another reason I love slow cooker meals, because I always have dessert after dinner so if I'm making dessert it's nice to have a simple dinner to throw together. Also, I can never get over how tender and flavorful the meat is that's been slowly simmered all day in the slow cooker.  You will noticed if you follow the link that the recipe is nearly entirely different, yes I will admit rarely do I ever stick to someone else's recipe. It's just too fun to add my own twist. Feel free to try it either way I'm sure the original rendition is amazing too. Enjoy! Slow Cooker Chicken Teriyaki Yields 4-6 servings Ingredients: 3 lbs boneless skinless chicken breasts 3/4 cup low sodium soy sauce (regular would wo...

Sonoma Chicken Salad Sandwiches

Gambar
If you like poppy seed salad dressing then this is the chicken salad of your dreams! This chicken salad is amazing and so simple! I was shopping at Sam's Club several weeks ago and taste tested some Sonoma Chicken Salad, it was delicious so I had to figure out how to make it at home. Following is the recipe I've come up with. It is my new favorite chicken salad. I'm going to start using the dressing to drizzle over green salads as well. My recommendation for the easiest way to make this is to cook the chicken in a slow cooker over night, toss it in an airtight container in the morning and refrigerate it, then by lunch time it will be cool enough to shred or chop and toss into the salad. I know this is going to be my new favorite dish for picnic lunches this summer. Just be sure after eating this chicken salad to smile real big... and check your teeth for poppy seeds =). Note: some other good substitutions for the dried cranberries would be diced apples or grapes and another...
